Brioux City Brewery began when Marty's Tap owner Kelly Quinn and home brewing friend Matt Hubert decided to take their home brewing hobby to the next level, making use of a 150 square foot kitchen in local neighborhood bar and Sioux City staple Marty's Tap and cramming it with as much brewing equipment as possible. Starting with a 1/2 BBL and then moving to a 1 BBL brewhouse, the duo started out brewing flagship brews such as "Sioux City Pretty" Porter, "Peanut Buddha" Stout, and "Lemon Haze" IPA. In 2020, Matt left to explore other endeavors, leaving the brewing operations to Kelly. After some small changes in marketing and brewing strategies, Brioux City has been building it's reputation as a brewpub not to miss out on when in the Siouxland area.
Kelly Quinn has been brewing beer for the better part of 10 years after being gifted a home brewing kit from his wife for Fathers day. Being an avid cook, brewing comes naturally for Kelly and working with new ingredients, malts, hops, and yeast strains is what helps Brioux City come out with an evolving list of new beers monthly. Introducing new beers (including a new line of kettle sours) and getting ready to launch a new barrel aging program is what is next on the horizon for Brioux City in 2020, according to Kelly.
